SPRING 2024 TREND DRIVERS BAKERY NOTES The café theme which is so popular in Autumn/Fall has infiltrated the cool months of Spring. Less pumpkin spice and apple styled though, and more warm pastry and sweet pudding infused. A FRUITY AFFAIR Sunshine infused ingredients and fruity nectars are popping up early this year – sugared fruits, lush rainforests, sweet lychee and coconut water infusions hint at sunshine happiness vibes. Pear, cherry, strawberry, peach, quince and lots of orange fruits from clementine to grapefruit – joy that’s almost euphoric it’s so brightly emboldened with these neon nectars. WILD WARMTH Suede, palo santo, golden amber, roasted hazelnut, myrrh, almond, warm cardamom, toasted sesame, white cedar, nutmeg, tobacco, incense and all manner of rich, warm, earthy and smoky scents meet this season for a different side to decadence. Linked to nature’s deeper and darker ingredients and echoing both an envisaged rustic landscape – think ultra earthy wilderness with mountain peaks alongside ingredients surrounded in heritage and tradition like incense.
